Childhood Faves: Grilled Cheese & Jello


Introducing… Childhood Faves with a twist! Thanks to Pinterest we stumbled upon countless plays on classic comfort foods. So why not start with grilled cheese and Jello? We were good and added healthy ingredients to the classic grilled cheese and cheated a little with a yummy sprite and Jello infused drink.

Ingredients:
Whole Grain Sliced Bread
Margarine
Colby Jack Cheese and/or Fresh Mozarella (your favorite cheese will work just as well)
Avocado
Grape Tomatoes

1) First things first we buttered up our bread on both sides of the slice (or in this case we margarined it - but that just doesn't sound as nice), so that it toasts up all golden and delicious.
2) Then we layered our cheese and veggies; instead of just your classic grilled cheese we decided to add in tomatoes and avocado for extra flavour and in our attempt to make it semi-healthy.
3) We didn't have a panini press so we "grilled" our sandwiches on the crepe pan and pressed down with on the sandwiches with a slotted turner.

Ingredients:
Rasberry Jello (or your favorite flavour jello)
1cup hot water
1cup cold water
Rasberries
Strawberries
Blueberries
Sprite

To make the jello we just followed the instructions on the box:
1) Add the Jello packet to 1cup of boiling hot water, (being impatient we microwaved a cup and a half of water for a minute and then measured out 1cup from it). I don't think the water needs to be boiling, but just hot enough to dissolve the Jello powder.
2) Add the Jello powder to the hot water and stir until ALL the powder is dissolved.
3) Add in 1cup of cold water.
4) We had some leftover berries in the fridge that needed to be used so we added that into the jello too.  You can keep your Jello mixture plain though if you wanted, or add different fruits.  Just be careful to read the Jello pack for fruit restrictions, as some fruit juices can prevent the jello from setting properly.
5) Chill the jello in the fridge and let it set.  To speed up the process, we chilled the jello in the fridge for two hours and for the third hour we moved it into the freezer.

image6) Now for the fun part, cut up your jello and spoon some into a glass.

 Pick your favorite fizzy drink to add to the glass of jello (all we had was sprite, but this would have been great with gingerale or maybe some san pellegrino soda), and enjoy!


This is such a fun and playful drink, and for a twist you could spike it with champagne or a splash of Boone's Sangria.
