A blog created by two cousins and inspired by one summery baking day together.
We are new and quite green when it comes to blogging, but we are both beyond-the-moon excited about this new adventure, and a
fter weeks of jumping through html/coding hoops we've finally made it to our first our first official post: 


Baking and Zelda!
Highlights from the baking day that started it all and the Zelda game that gave us a blast from the past.
These delicious cupcakes were inspired by a recipe from the lovely ladies of psheart.

Ingredients
Cake:
Betty Crocker Super Moist Chocolate Fudge Cake Mix
1 1/4 Cup of Trader Joe's Coconut Milk Beverage
1/3 Cup of Vegetable Oil (or Canola Oil)
3 Large Eggs
1/4 Cup of Decaffeinated Instant Coffee

Coconut buttercream:

1 Cup of salted butter, room temperature
4-5 Cups of Icing Sugar
4-5 Tablespoons of Pure Coconut Milk (instead of cream)
1 Tablespoon of Vanilla Extract (optional)
Sweetened Coconut Flakes (to taste)


We played with the recipe a little by adding instant coffee to the cake batter, using a chocolate cake mix to save time, and substituted coconut milk beverage for the milk/water the cake box recipe called for.

We were craving mocha and dreaming of starbucks that day so we added some instant coffee to satisfy our mocha craving after following the cake box instructions.

Bake at 350F, 18 minutes for the regular sized cupcakes, and around 7-8 minutes for the mini cupcakes, or until the toothpick test comes out clean.

We let these cool on the counter while we whipped up some icing.

Beat the butter lightly first before adding icing sugar, and make sure to mix in between icing sugar additions.
Add a tablespoon of coconut milk every other cup of icing sugar.
Both of us are quite new to baking, so we know that buttercream can be tricky, the best tip we could give you is to try your icing and make little adjustments as you go along. Too runny, and it probably needs more icing sugar or your butter was too soft. If you can taste the icing sugar, try adding a little more butter and smidge more coconut milk.

We also added a sprinkle of coconut flakes before piping the icing onto the cupcakes.

Best way to end a baking day, was to plop down on the couch with a cupcake and watch this epic Zelda moment 14 years in the making. We could never get past the second stone as a kids, we were a bunch of scaredy-cats so over a decade later the N64 is resurrected and voila, not such a scary game after all.
